When I first came across recipes that use cake mix as the main ingredient, I was skeptical, but after making decadent desserts like this apple tart or using packaged brownie mix to make these brownies, I was sold.

I’m someone who prefers to bake from scratch, but sometimes when the recipes turn out this good, I’m all for the shortcut.

One of the easiest cookie recipes ever – This cookie recipe only has 5 ingredients and you simply add them all to the bowl, mix them together and then roll them into balls.

Quick to prepare – If you need to make a quick dessert or are short on time, these cookies can be made in minutes. It takes 5 minutes to prepare the dough and no more than 11 minutes to bake it.

Chilling the dough before baking is optional, but it only adds an extra 10 to 20 minutes.

> 1 cup all-purpose flour

> 1/4 cup cocoa powder

> 3/4 tsp baking powder

> 1/4 tsp salt

> 1/2 cup brown sugar

> 1/4 cup 1/2 stick unsalted butter, at room temperature

> 2 eggs at room temperature

> Mix 1/4 cup buttermilk or milk with 1/4 teaspoon lemon juice

> 1/2 cup 1 stick unsalted butter, at room temperature

> 1 cup granulated sugar

> 1 tsp vanilla extract

> 1 dl marshmallow paste

> 4.5 ounces of milk or semisweet chocolate

> 3 tablespoons unsalted butter

> 1 tablespoon glucose syrup or honey

> 1/2 tsp vanilla extract

INSTRUCTIONS

1- Heat the oven to 350 degrees. Line baking trays with baking paper.

2- Mix flour, cocoa powder, baking powder and salt in a medium bowl.

3- Beat butter and brown sugar in a large bowl until fluffy. Stir in the vanilla extract. Sprinkle 1/3 of the flour mixture over the butter mixture and beat until well combined. Then add half of the buttermilk and stir until well combined. Repeat with remaining flour mixture and buttermilk, finishing with flour.

4- Place 1-2 tablespoons of dough about 3 inches apart on the prepared baking sheet and bake for 10 minutes, until the center is no longer soft. Let cool on the baking sheet for 2 minutes, then transfer the cookies to a wire rack and let cool completely.

5– Beat the butter and sugar until fluffy. Stir in the vanilla extract until well combined, then stir in the marshmallow batter until well combined. Spread a layer of marshmallow frosting on each cookie. Let the cookies cool for 30 minutes.

6- Combine chocolate, butter and corn syrup in a medium bowl. Microwave for 30 seconds, stirring each time, until all the chocolate chips have melted. When the mixture is smooth, stir in the vanilla. Pour the chocolate into a piping or ziplock bag, cut off the end and drizzle over the cookies.

Devil’s Food Cake Mix – I only use Pillsbury’s Devil’s Food Cake Mix when making these cakes, or whatever version is available.

Oil – canola, sunflower or mild olive oil works better than vegetable oil.

Vanilla extract – Mixing in a little vanilla helps bring out all the flavors. If you’re making these devils food cookie for the holidays, try some almond extract.

How do you make Devil’s Food Cookie Mix Cake?

Prepare the dough. In a large mixing bowl, whisk together the cake mix, oil, vanilla, eggs, and 1/4 cup sugar until well combined and a sticky dough forms.

Let the dough cool. Cover the bowl and refrigerate for 15 to 30 minutes to set the dough.

Take out the dough and roll it out. Using a cookie scoop, take about 2 tablespoons of dough, then roll it into a ball with your hands. Dip each ball lightly in the sugar to coat the outside.

Arrange the cookie dough balls. Place the cookie dough balls about 2 cm apart on a sheet lined with baking paper.

Bake the cookies. Bake for 9 to 11 minutes, until the cookies are set (mine are usually perfect after exactly 11 minutes). Let cool for 1 minute before transferring to a wire rack to cool completely.

When they come out of the oven you will be tempted to take a cookie, but since they are so soft, let them cool for 1 minute. Otherwise they will fall apart.

Storage Instructions: Place cookies in an airtight container or zip-top bag, removing as much air as possible. They last 7 to 10 days before drying out.

Freezing : To freeze the dough, place it in a zip-top freezer bag and store in the freezer for up to 3 months. To freeze the cookies, let them cool completely before placing them in a single layer on a cookie sheet and freezing for about 20 minutes.

How to make Triple Chocolate Devils Food Cookie?

These cookies are so easy to make, there really is no excuse not to bake them. To make the cookies, start by pouring the dry cookie mix into a bowl.

When the cookie dough is ready, use a small ice cream scoop or tablespoon to scoop out small balls. Place about eight of them on each baking sheet. I made 24 cookies with this recipe.

There is no need to roll the dough between your hands unless you prefer a smoother cookie. Either way they will taste good!

>To make them into chocolate chip cookies, add 3/4 cup chocolate chips to the dough before chilling.

>Use a lightly flavored oil. Instead of vegetable oil, use an oil such as canola, sunflower or mild olive oil.

>Bake the cookies no longer than 9 to 11 minutes. When the middle looks firm and starts to crack, they are ready.

>Add your favorite add-ons. As with all cookies, you can add your favorite cookies, such as chopped pecans or other nuts, shredded coconut, white chocolate chips, or even dried fruit like cranberries or raisins.
