Poke is a traditional Hawaiian dish made from small pieces of fresh and raw fish or shellfish combined with finely chopped vegetables, herbs, spices and seasonings.

Although traditional poke uses either ahi tuna (yellowfin tuna) or squid, today there are countless variations of this dish, including poke made with salmon, clams, crabmeat or oysters, as well as vegetarian versions made with diced avocado.

In addition to raw fish or shellfish, typical ingredients include sweet onions, garlic, shallots, spring onions, sesame seeds, seaweed, walnuts, limu (brown seaweed), soy sauce, honey, sesame oil, red pepper flakes, and Hawaiian sea salt.

The creation of poke is attributed to local fishermen who combined freshly caught small reef fish with some spices such as sea salt, walnuts, limu and seaweed to create a filling snack.

Malasadas are traditional Portuguese yeast donuts made from eggs, flour, sugar and milk. Sometimes they are coated with cinnamon or granulated sugar.

The original Portuguese malasadas do not have holes or fillings, but the varieties prepared in Hawaii do.

The popularity of malasadas in Hawaii is no accident: in the 19th century, Portuguese workers from the Azores came to Hawaii to work on the plantations.
